pimiento cheese

oh my gosh, this was good. it was probably the best thing i ate all year.

i've been wanting to try pimiento cheese for ages, so when andrew knowlton said it was great for a work party, i made it for one. and it was salty and rich and savory and delicious. it had a creamy texture like whipped cream cheese, but with an extra sharp cheddar flavor with a hint of something fresh from the peppers, and i couldn't stop eating it. i made it almost two months ago, and i still get cravings for it.
